They absolutely can, if the missile is heading straight for them. Then it's a matter of just lining up a shot.

These aren't smart missiles, they can't take evasive actions to avoid incoming fire.

They rely on speed to avoid interceptions.

You can also lead a shot in the missiles direction well in advance, in order to intercept.
