Actually gluten gives it more taste. With the passage of time more varieties were created (GMO or selective breeding) which were rich with this protein. But major problem with wheat and barley has always been that we liked it, and so did other organisms ( pests or fungus or many things). So the varieties which were selected were more resistant to these problems. But then it was also not good for human consumption. At the moment all the crops , they don't kill you but they give you a lot of inflammation and allergies.
That's selective cropping plus GMO.

I am not an expert in bio sciences, but some knowledge that I have is as following: plants evolved some defense mechanisms that prevent other animals from consuming them. Even seeds cause a lot of inflammation. That's why we soak lentils and almonds before consuming them, as this shutsdown some harmful enzymes in seeds.
The more a crop becomes pest resistant the less safe it becomes for human consumption. The traditional ancient seeds that we humans consumed were less tasty but more safe. But now Monsanto( now Bayer) compell us to consume something that we are not supposed to consume.
