China is still getting oil from Persian gulf but they just hush hush about it. Some of it is gcc and some of it is iranian. China in return sells chemicals and missile tech to iran.

So why does China not simply send its own vessels to take oil from Iranian ports?

US won't dare attack a Chinese flagged vessel.

I guess to avoid the risk of unintended war with US. Persian Gulf is an active risk zone with naval blockades and military threats from both sides, making official warship escorts a massive military gamble. China buys the vast majority of Iran’s oil covertly. Instead of sailing into dangerous waters, Chinese operators load crude oil through ship-to-ship transfers in the safer waters of the Gulf of Oman. It's a rational decision of Chinese gov.

Modern weapons have hardware and software level encryption in them such that these days the possibility of data recovery would be extremely difficult if not impossible.

They can of course study the hardware see how it was designed, put together and replicate the layout, but the software side/data is I reckon out of the equation imho.
