Let’s wait for the official damage assessment. Relying on public domain information to draw conclusions is misleading and moot.

Iran should target Israeli pilots for assassination. I don't know how many pilots Israel has but, if enough of them are killed, most of their fancy planes will be worthless (until/unless foreign pilots trained in those planes volunteer to replenish).

People don't walk around with a kevlar vest and helmet all day long.

These pilots take vacations, they go to the gym and the supermarket, they live ordinary lives for the most part.

HUMINT is one of the easiest areas to close the capability gap. It doesn't require billions of dollars and a mature technology base like other capability gaps.

That can cut both ways. Iranian pilots and drone operators and other key military personnel have ordinary lives as well, and can be killed while shopping or going to the gym. Both countries would be wary of going after military personnel in such a manner.

HUMINT is not as easy as you make it out to be. It may not require billions of dollars, but that capability has to be developed very patiently and painstakingly. It takes decades or even a generation to set up a sophisticated HUMINT network.

As of today, I would wager that Israel has a much better HUMINT network in place against Iran than vice versa - as demonstrated by their knowledge of the meeting of Iranian generals and commanders in the consulate.
