He actually does very regularly, like he just said, He likes inflation and few days ago he said he doesn't care about economy and people.
 
If Iran accepts a deal without complete withdrawal of Israeli troops from South Lebanon then its mosaic defence will be completely neutered. Loosing Bashar's Syria was bad enough and the main reason Israel and America felt comfortable enough to start these last 3 wars but losing Lebanon too would be existential.

So, realistically, assuming that this ceasefire extension goes through and Trump isn't lying again, what can Iran do during these 60 days to defend itself better next time? Besides production of a couple hundred ballistic missiles and drones, is there anything else that Iran can do during this time?

The 60-day extension is clearly good for the US and Israel as it gives them time to prepare for the next round and it gives the world economy more time to prepare for the next round as well. Most likely, oil prices will return back to less than $80 per barrel. However, I do not think Iran can use this extension to improve its AD or get military equipment from either Russia or China.

Also, now that Israel is not part of this extension, what will happen to Hezbollah?

There is no deal... I'm willing to be wrong.
However regardless of any "deal"... understand the purpose behind and not the face value... what function does it serve other than stabilize the markets... that have been pricing and working on only one assumption that ... there is one!
There is no difference before and after... until permanent change of US posture in Mideast... meaning withdrawal of all forces! At that point nuclear demands on Iran will become meaningless anyways.
Iran faces primary threat from inside... those chasing the mirage! Similar to ones in Libya that destroyed their own country and have pushed themselves back half a century or more in infrastructure and perhaps permanently scarred themselves emotionally.
Simultaneously, Iranian defense starts outside Iran... in its periphery... the attacks on Iran use air, ground and water of contiguous states with impunity. Iraqi and Syrian air spaces are critical and used with or without consent. Jordan is an extension of zion... so are the smaller gulf sheikhdoms... Qatar plays both ends... but primarily to secure its own space... perhaps Pakistan here can swap existing security architecture... something that no one else can offer. Lebanon is a critical front where zion seeks to expand along with Syria. Sooner or later southern Syria will again come into play and there Turkiye will either have to fold or partner with Iran.
Lastly, Iran has major gaps in it's defenses... and is in a unique position to plug them. The enhanced profile offers another unique opportunity to work with states globally... that can benefit from Iran... by providing them a substitute in alternative payments and helping alleviate some of their pains. As US will seek to coerce or damage them financially by further sanctions.

Iranians are pretty ghaad darn civilized (westernized n educated) compared to them Afghanis and eventually there's goin be some semblance of an agreement/ truce/ detente. US/ Iran can get their shit together and talk, down da road and more than likely do business together. Not far fetched a narrative.

Right but only to the extent the Israeli lobby could be resisted. There are powerful forces in America who are working against the American interests in the Middle East. A result of this war at the behest of Israel is an almost certain weakened American position in the Middle East and with possible damage to the Petro Dollar gravy train.

But when a person of the stature of VP Vance says--as he recently said-- that USA may have to have detente with Iran whether Israel likes it or not then that tells you where the wind is blowing. No future American President would agree to wage another war like this against Iran despite Israel's influence. This would be the last war and only happened because two people happened to be in office at the same time: Netanyahu and Trump. This is their personal war.
