Talking with Europeans is fine but be sure to know that Seljuks and Ottomans was an existential threat for more than a millenia against them. They would like to see you dead instead of becoming a major muslim power player that can be a threat later on reminding their historical traumas.
So easily believing them is stupid especially after the failed last nuclear deal of Iran and their stance of removing the Iranian threat. No one is enemy of europe It will take time to forget their past traumas coming from history and it is better to leave it to time as other major players will emerge in the region. But believing them in a good cop bad cop drama for Iran would be stupid.
