It's simple really, as far as UAE/Saudi are concerned, the job has been started, so may as well finish it properly. Cease-fire is not a legal binding document, any party who is not happy can leave it and resume their attacks on their enemy. You are assuming here that Israel suffered no damages. It is clear they got pounded and all that destruction is taking a toll on their society, army, economy etc.All that will make it harder for Israel to implement their plans.
