Do these same scientists that are targeted not also work directly on Iran's nuclear program? If so, shouldn't they be hidden and protected to keep them safe, at least until they retire and no longer work on these programs? Both for safety and national interest reasons

You can find their names by going to the websites of the physics departments of our universities and look for people focusing on subjects that are related to nuclear physics. I'm sure I can find many such professors in China as well. It's not that hard.

Back in the days when China developed its nukes, not many in schools. They were pretty much all in the nuke program.
