About the rest of your post, you are confusing Judaism the religion and Jewishness as an ethnicity. When many Jewish people say they are Jewish, they are referring to their ethnicity or ancestry, not religious beliefs. Many (I think the majority) of Jewish people are irreligious.
You are right that one cannot disbelieve the teachings of Islam and call oneself a Muslim, but that is not true for Judaism (being both a religion and an ethnicity) or Hindusim (which is a very nebulous concept).
