What happens to the extra space JF17 has to carry pilots' belongings for a long flight pre-deployment? Is that compartment still there, or has it been utilized for extra fuel or electronics?

Doubt it has any dedicated space in there for the pilot's personal belongings, that would be a waste of space on a small airframe. On the F-16 there's a small space behind the pilot's seat where you can stuff some belongings but not much. For any reasonable amount, as arslank01 mentioned, the pilot can take them in a cargo/travel pod, such as the one below. Usually they are sent on the next, previous, or accompanying C-130.

Correct if I'm wrong but that's not a cargo hold. That's where the gun ammo goes. If you're not planning on using the gun, you can stuff your bag in there instead of the ammo. Australians used to store their luggage in the weapons bay of their F-111s.
