Lets be honest - Indian and largely South Asian cuisine doesn't need any acceptance/acknowledgement from French/Europeans.

Our cuisine was way more advanced thousands of years as it is now. Infact, if you study for any length) the practices of cooking and how cuisine was used as medicine you'll find that today's supposed practices - 16:8, Keto etc are archaic in comparison.

We need to ready/study, recognize, add a scientific rigor and then move the world a few levels up - the food practices of broader world (outside of the 3-4 centers of civilization) are lacking significantly.
