I think if they escorted every ship, or convoy of ships, it would increase the risk that a missile might get through and hit a military ship causing casualties.

This would escalate things very quickly out of control and the US does not want body bags in an election year.

Well for one thing, at sea there is a finite supply of munitions and these are reserved to protect USN vessels in hostile waters. Or Ansarullah (Houthis) made their weapons with the help of expertise from the other countries. With the way they're launching those endless anti-ship, drone, and cruise missiles, there is definitely arms manufacturing happening in Yemen. There is virtually an operation that they're launching on daily basis.

China and Russia are not gonna interfere in the Red Sea due to US and UK refusing to force Israel to stop the genocide it has unleashed on the Palestinian people. Besides, the Russian and Chinese ships are not getting attacked. And especially with the Russians, this could provide a way they can exact pain on the West provided they're willing to arm the Ansarullah in Yemen.

They did get support from Iranians and Hezbollah, but they seemed to have adopted to produce those weapons internally. The Iranian support could also be still continuing.

As one of the two parties in the conflict that is the topic here, its "supporters" also have the same obligations to help contain and indeed end the conflict as any others that are being asked to use their influence to do the same.
