One Shahed hit a day at a random pumping station will do the job. Or the entire processing facilities can go up in smoke in extreme cases. That part is easy. Iran currently possesses the capability to prevent them from exporting oil if it really wants to. If that comes to force it will be regional hegemony.

There will have to be loading stations. There will be physical ships. Oil has to get transferred to ships somehow. The ships move slowly. Sinking one will close a canal. We saw that at the Suez a couple of years back. That is a very target rich environment. Disrupting such delicate and safety sensitive operation is very easy.
