It was in 65 that Indian tanks had Saffron colored roundels painted onto them for ID.
Saffron colors association with Indian culture and themes has less to do with the edible item and more to do with the colors association with Brahmin and more importantly dharmic ideals(interestingly coopted by many muslim saints as well as part of their outreach in India).

So whoever in 65 decided to paint those roundels led to the idea of the color from Saffron being associated with India.
