KAAN: multiple 5th gen prototypes.
KF-21: In low rate production, 4.9 gen, will be true 5th gen in future blocks.
AMCA: 5th gen, still on paper, no actual work have been done on building a prototype.
KAAN has only 1 prototype and first prototype at that with second prototype being constructed. Multiple prototype implies more than 2.
KF-21 doesn't have an internal bay and Korean promise of being able to deliver IWB is a hilarious one to an engineer. IWB means almost starting from scratch. IWB for medium sized fighter is incredibly difficult to do and still have the fighter perform so well with giant cavity near centre of gravity of aircraft. Flight controls need almost entire rework, structure too and all the electronics, fuel, sensors etc.
KF-21 is a good way to get other components into maturity before they take the full IWB step but I'd say KAAN is better overall just lacks a reliable source of engines for now.
AMCA is indeed paper project in comparison to those two above.
